We also work with a group of partner farms to provide USDA prime and choice beef and Cheshire pork. These partner farms maintain the highest standards of quality production and animal raising.

In order to produce the best beef, we first have to produce the best grass. Grass-fed, grass-finished beef produces a truly healthy beef that has:
• Less total fat
• More heart-healthy omega-3 fatty acids
• More CLA (conjugated linoleic acid), a type of fat that’s thought to reduce heart disease and cancer risks
• More antioxidant vitamins, such as Vitamin E

Hickory King: A Love Story
We’re in love with Hickory King. It is hands-down the most flavorful corn we’ve ever tasted. It takes a little longer to cook, but the resulting product is well worth the wait. We started our heirloom corn crop from a few handfuls of corn we got from some friends in Texas. Hickory King is an open-pollinated variety of yellow corn developed in Appalachia in the 1800s. At the gristmill at Farmview Market in Madison our corn is milled each day to produce fresh and flavorful grits and cornmeal.
