This month, we’re featuring a delicious recipe that highlights our farm-fresh feta cheese—Spinach & Feta Stuffed Chicken. With tender chicken breasts, creamy feta, and fresh spinach, this recipe is perfect for a quick weeknight dinner or a special weekend meal.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1/2 cup Rock House Creamery Feta, crumbled 
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Toothpicks

Instructions:

  1. Preheat the oven to 375°F.
  2. In a bowl, combine chopped spinach, minced garlic, and crumbled Rock House Feta Cheese.
  3. Butterfly each chicken breast by slicing it open horizontally, being careful not to cut all the way through.
  4. Stuff each breast with the spinach and feta mixture, then secure the opening with toothpicks.
  5. Heat olive oil in an oven-safe skillet and sear the chicken breasts on each side until golden brown.
  6. Transfer the skillet to the oven and bake for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F.
  7. Remove the toothpicks, serve, and enjoy!
